Blue Oyster
Vibrant, fast-growing, and deeply savoury. A staple for everyday cooking, with a rich umami flavour and beautifully layered structure. Their tender texture and wide caps make them ideal for sautéing, roasting, or adding depth to a variety of dishes, from simple meals to more elevated plates. Reliable and versatile, Blue Oyster mushrooms are one of the most approachable and widely enjoyed specialty varieties.
Lion’s Mane
Soft, cloud-like clusters with a delicate, seafood-like texture. Prized for its versatility in the kitchen, it can be sautéed, roasted, or pulled apart into tender, meat-like pieces. Its mild flavour allows it to take on a wide range of dishes, from simple preparations to more refined plates. Also valued in functional wellness, Lion’s Mane is one of the most distinctive and sought-after specialty mushrooms.
Seasonal & Limited Varieties
Small-batch mushrooms grown and released in limited quantities throughout the year. Varieties may include Pink Oyster—bright, delicate, and best enjoyed fresh; Golden Oyster—light, fast-growing, and subtly citrusy; Chestnut Mushrooms—firm, nutty, and deeply savoury; Shiitake—rich and umami-forward, suited for fresh and dried use; Maitake—tender, layered, and highly prized; Reishi—woody and traditionally used for teas and powders; and Cordyceps—vibrant and valued for its functional qualities.

Because we grow in small batches, availability can vary. Some harvests are abundant, others more limited—that’s part of the process and what keeps each release fresh and intentional. This approach allows us to stay closely connected to each grow and maintain the quality we stand behind.
