Lion’s Mane mushrooms have a delicate, meaty texture that turns beautifully golden when seared in a hot pan. When cooked in butter with garlic and finished with a squeeze of lemon, they develop a savoury flavour many people compare to crab or lobster.
This quick recipe is perfect for brunch, lunch, or a light dinner, and it lets the natural flavour of Lion’s Mane shine.
Why Lion’s Mane Works So Well for Toast
Lion’s Mane mushrooms naturally tear into soft, fibrous pieces that crisp up on the edges when cooked. Instead of slicing them, gently pulling them apart creates more surface area, which means better browning and flavour.
Once golden, the mushrooms are piled onto toasted bread where they soak up the garlic butter and lemon.
Simple, rustic, and incredibly satisfying.
Ingredients
Serves 1–2
100–120 g fresh Lion’s Mane mushrooms
1 tablespoon butter (or olive oil)
1 small garlic clove, finely minced
Salt and freshly ground pepper
Squeeze of fresh lemon
1–2 slices good bread (sourdough or rustic loaf works beautifully)
Optional toppings:
chopped parsley
chili flakes
grated parmesan
drizzle of olive oil
Instructions
1. Prepare the mushrooms
Gently tear the Lion’s Mane into bite-sized pieces. Avoid cutting if possible — tearing helps create natural edges that crisp up during cooking.
2. Heat the pan
Place a skillet over medium heat and add the butter. Once melted and lightly bubbling, add the mushrooms.
3. Sear until golden
Let the mushrooms cook undisturbed for about 2–3 minutes so they begin to brown. Stir occasionally and continue cooking until they develop golden edges.
4. Add garlic
Add the minced garlic, a pinch of salt, and pepper. Cook for another 30–60 seconds, just until fragrant.
5. Finish with lemon
Remove from heat and squeeze a little fresh lemon juice over the mushrooms.
6. Assemble the toast
Toast your bread and pile the warm mushrooms generously on top.
Finish with parsley, chili flakes, parmesan, or a drizzle of olive oil if desired.
